A truly great burger starts with one thing — bold seasoning. Most people underseason their burger patties and wonder why their homemade burgers never taste as good as restaurant ones. The secret is aggressive seasoning with the right blend of sweet, smoky, and spicy flavors that caramelize on the outside of the patty during cooking and create a crust that locks in all the juicy beef flavor inside. Chimi Boss Blends Sweet Heat BBQ Rub delivers exactly that — sweet brown sugar, bold smoky paprika, and a kick of heat that makes every burger patty taste like it came straight off a championship BBQ pit.

How to Make Sweet Heat BBQ Bacon Burger
1) Make the Sweet Heat BBQ Glaze
In a small bowl whisk together BBQ sauce, Chimi Boss Blends Sweet Heat BBQ Rub, honey, and hot sauce until fully combined. This bold sweet heat glaze goes on the burger during the last minute of cooking AND is brushed on the toasted bun for maximum flavor in every bite. Set aside.
2) Form the Patties
In a large bowl combine ground beef, Sweet Heat BBQ Rub, garlic powder, and Worcestershire sauce. Mix gently until just combined — do not overwork the meat or the patties will become dense and tough. Divide into 4 equal portions and form into patties slightly wider than your buns since they will shrink during cooking. Press a small dimple in the center of each patty with your thumb — this prevents the patty from puffing up into a dome shape as it cooks.
3) Cook the Bacon
Cook thick-cut bacon in a skillet over medium heat until perfectly crispy. Drain on paper towels and set aside. Keep the bacon fat in the pan if cooking burgers in a skillet — it adds incredible flavor to the patty crust.
4) Grill or Sear the Patties
Preheat your grill or cast iron skillet to medium-high heat. Season the outside of each patty with an extra pinch of Sweet Heat BBQ Rub right before cooking. Cook for 3-4 minutes per side without pressing down — pressing squeezes out all the juicy beef flavor. During the last minute of cooking brush the top of each patty generously with the sweet heat BBQ glaze and place a slice of cheddar cheese on top. Cover to melt the cheese completely.
5) Toast the Buns
While the burgers finish cooking place the brioche buns cut side down on the grill or in a buttered skillet for 60-90 seconds until golden and slightly crispy. Brush the toasted cut sides with extra sweet heat BBQ glaze for bold flavor on every layer of the burger.
6) Build the Burger
Spread mayonnaise on the bottom bun. Layer lettuce, thick sliced tomatoes, and red onion. Place the Sweet Heat BBQ glazed patty with melted cheddar on top. Stack 2 strips of crispy bacon over the cheese. Add pickles and the glazed top bun. Press gently and serve immediately with extra sweet heat BBQ glaze on the side for dipping.
Tips for the Best Sweet Heat BBQ Bacon Burger
• Use 80/20 ground beef. The 20% fat content is what keeps your burger juicy and flavorful. Leaner ground beef produces dry, less flavorful burgers that no amount of seasoning can fully fix.
- Never press the patty. Pressing a burger patty while it cooks squeezes out all the juices that make it moist and flavorful. Let it cook undisturbed and trust the process.
- Make the dimple. That small thumb dimple in the center of each raw patty prevents it from puffing up into a dome as it cooks. Flat patties are easier to build and eat.
- Season the outside before cooking. In addition to mixing the rub into the meat add an extra pinch of Sweet Heat BBQ Rub to the outside of each patty right before it hits the grill for an extra bold caramelized crust.
- Glaze in the last minute. Adding the sweet heat BBQ glaze in the last minute of cooking allows it to caramelize and set on the patty rather than burning off over the full cook time.
