How to Make Infierno Chimichurri Smash Burgers
1) Make the Infierno Chimichurri Sauce
In a small bowl combine Infierno Chimichurri Dry Blend with red wine vinegar and stir well. Let sit for 3-5 minutes to hydrate fully. Add olive oil and mix until completely combined. Set aside — this bold fiery chimichurri sauce is the flavor element that makes this smash burger completely unforgettable in every single bite.
2) Form the Beef Balls
Divide the ground beef into 3oz balls — do not overwork or compress the meat. Loose beef balls smash much thinner and develop a better caramelized crust than tightly packed ones. Season the top of each ball generously with Infierno Chimichurri Dry Blend, salt, and black pepper right before cooking.
3) Preheat the Griddle or Cast Iron
Heat a large cast iron skillet or flat griddle over high heat until smoking hot. Add butter or avocado oil and spread evenly. A screaming hot cooking surface is the most critical element for achieving that iconic deeply caramelized crust on every smash patty every single time.
4) Smash the Patties
Place a beef ball seasoned side down onto the hot griddle. Using a heavy metal spatula or burger press smash the ball flat in one firm motion within 10 seconds of placing it down. The patty should be extremely thin — about ¼ inch thick. Do not move it once smashed — let the crust build completely undisturbed.
5) Cook and Cheese
Cook for 2-3 minutes until the edges are deeply caramelized and crispy and the top of the patty begins to look grey. Flip once using a firm scraping motion to preserve the crust. Immediately add a slice of cheese and cook for 30-45 more seconds until the cheese melts completely over every edge of the patty.
6) Build and Serve
Spread chipotle mayo generously on both sides of the toasted brioche bun. Layer lettuce, tomato, and red onion on the bottom bun. Stack one or two patties on top. Drizzle the Infierno Chimichurri Sauce generously over the patties. Add pickles and the top bun. Serve immediately while the patties are hot and the cheese is perfectly melted.
Tips for the Best Infierno Chimichurri Smash Burger
• Use 80/20 ground beef. The fat content in 80/20 ground beef is essential for a juicy and flavorful smash burger. Leaner ground beef dries out completely during the high heat cooking and produces a tough and disappointing patty every single time.
- Smash within 10 seconds. Always smash the beef ball within the first 10 seconds of placing it on the hot griddle. After 10 seconds the proteins begin to set and the patty can no longer be smashed thin enough to develop the iconic crispy caramelized crust.
- Never move the patty after smashing. Let the crust build completely undisturbed until it naturally releases from the griddle. Moving it too early tears the crust and leaves patches of grey meat instead of a beautiful golden caramelized sear.
- Use a heavy metal spatula. A thin sharp metal spatula is essential for smash burgers. It creates the initial smash and then scrapes the caramelized crust cleanly off the griddle without tearing the patty apart when flipping.
- Toast the bun. Always toast the brioche bun until golden in the burger fat on the griddle. A toasted bun adds incredible flavor and prevents it from becoming soggy under the juicy patty and bold chimichurri sauce.

Storage & Reheating
Store leftover smash patties in an airtight container in the fridge for up to 3 days. Reheat in a hot cast iron skillet over medium-high heat for 1-2 minutes per side until warmed through and the crust crisps back up. Always store the Infierno Chimichurri Sauce separately and drizzle fresh over the patties after reheating. Avoid the microwave — it makes the patties soft and steamy instead of crispy and caramelized every time.
