How to Make Chimichurri Shrimp Skewers
1) Marinate the Shrimp
In a bowl combine olive oil, minced garlic, smoked paprika, salt, pepper, and lime juice. Add the shrimp and toss to coat evenly. Let marinate for 10–15 minutes while the grill heats — don't marinate longer than 20 minutes as the lime juice will start to cook the shrimp.
2) Skewer the Shrimp
Thread the marinated shrimp onto skewers — about 4–5 shrimp per skewer. If using wooden skewers soak them in water for 30 minutes before grilling to prevent burning.
3) Grill the Shrimp
Preheat grill to medium-high heat (400°F / 200°C). Place shrimp skewers on the grill and cook for 2–3 minutes per side until pink, opaque, and slightly charred. Shrimp cook very quickly — remove as soon as they turn opaque to avoid overcooking.
4) Drizzle with Chimichurri
Remove shrimp from the grill and immediately spoon Chimi Boss Blends Authentic Chimichurri Sauce generously over the top. The warmth of the shrimp releases the aroma of the herbs and garlic — absolutely incredible. Finish with a squeeze of fresh lime juice and fresh parsley.
Other Cooking Methods
Cast Iron Skillet
Heat a cast iron skillet over medium-high heat with a drizzle of olive oil. Cook shrimp for 2–3 minutes per side until pink and cooked through. Drizzle with chimichurri sauce right before serving.
Air Fryer Chimichurri Shrimp
Air fry at 400°F / 200°C for 6–8 minutes shaking halfway through. Drizzle generously with chimichurri sauce immediately after cooking.

Tips for Perfect Chimichurri Shrimp
• Don't overcook — shrimp go from perfect to rubbery in under a minute. Pull them the moment they turn opaque.
- Pat shrimp dry before marinating for better seasoning adhesion and char.
- Don't over-marinate — 10–15 minutes is ideal. The lime juice will start cooking the shrimp if left too long.
- Drizzle chimichurri immediately — spoon the sauce over hot shrimp right off the grill for maximum flavor impact.
- Double the chimichurri — always have extra on the side for dipping.
Storage & Reheating
Leftover shrimp keeps in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet over low heat for 1–2 minutes — avoid the microwave as it makes shrimp rubbery. Cold chimichurri shrimp is also excellent served over a salad straight from the fridge.
