6 bone-in skin-on chicken thighs
3 tbsp olive oil
2 tbsp Chimi Boss Blends Original Chimichurri Dry Blend
2 tbsp fresh lemon juice
3 cloves garlic, minced
1 tsp salt
½ tsp black pepper

1 tbsp red wine vinegar
1 tbsp fresh lemon juice

How to Make Chimichurri Chicken Thighs

1) Marinate the Chicken

In a bowl combine olive oil, Original Chimichurri Dry Blend, lemon juice, minced garlic, salt, and pepper. Add chicken thighs and toss to coat thoroughly. Let marinate for at least 20–30 minutes at room temperature, or up to 24 hours in the fridge for deeper flavor.

2) Grill the Chicken

Preheat grill to medium-high heat (400°F / 200°C). Place chicken thighs skin-side down and grill for 6–7 minutes until the skin is crispy and golden. Flip and cook another 6–8 minutes until internal temperature reaches 165°F / 74°C. Let rest for 5 minutes before serving.

3) Make the Chimichurri Sauce
