1 whole packer brisket (12-14 lbs) — point and flat intact

How to Make SPG Brisket
1) Trim the Brisket
Trim the fat cap down to about ¼ inch thick. Remove any hard chunks of fat that won't render during cooking. Leave enough fat to baste the meat during the long smoke. A properly trimmed brisket cooks more evenly and develops a better bark.

5) The Texas Crutch

Storage & Reheating
